Bacon Wrapped Smokey Links

In his first post with the Pepperheads For Life team, contributor Dennis Johnson has put together an amazing recipe that looks to be the perfect snack during these remaining cold days of the winter.

Ingredients:

  • 1 package cocktail smokies
  • 1 package bacon
  • 1 Cup Slap Yo Mama Toxic Waste BBQ sauce
  • 1/4 Cup dry rub from Stu’s Chili Sauces (dried garlic, onion, smoked Ghost Pepper flakes,  smoked Trinidad Scorpion flakes)
  • 2 teaspoons ground cayenne pepper
  • Toothpicks

Preparation:

In a resealable gallon plastic bag, put all the smokies and half the bbq sauce. A couple of hours will do, but overnight is better.

Directions:

Preheat oven to broil at 250.

Remove bacon from package and cut into thirds. Wrap each smokie in bacon, securing with a toothpick. Arrange smokies on a baking sheet. Drizzle remaining bbq sauce on the bacon-wrapped smokies. Dust vigorously with Stu’s dry rub, then finish with the cayenne pepper.

Place on middle rack of preheated oven. Broil for 5-8 minutes then switch over to bake for 10-15 minutes. Pay attention!  Times vary depending on thin or thick-sliced bacon.

Enjoy, fellow chile-heads!
