So, you take ground beef, onions, and bacon, and what do you have? Bacon Onions!
Again, as with the Scotch Eggs, you start by making your favorite meatloaf recipe. You can make these and the Eggs at the same time, using the same meatloaf.
As usual, preheat over to 375 degrees. Then make your meatloaf receive, leaving it raw.
Cut off the tops and bottoms of your onions – I prefer white onions, yellow are too strong – red / purple might work OK. Cut a slit from the center of the onion through the the outer ring.
Knock out the center of the onions, saving 2-3 rings from each onion (like little spheres). Then fill with your meatloaf mixture.
Lay out your bacon strips, as so…
Then wrap your onion. Place in your pan, making sure they don’t touch each other, as the back. Will be soggy wherever they touch – not good.
Cook for about 90 minutes in oven, maybe 2 1/2 hours on a smoker or grill.
These turned out quite well, as my family said. They want me to make them again. We’ll see. There are so many other one to try!
